Rofuto Japanese at Five Ways

Out In Brum - Rofuto - ExteriorWe’ve watched with interest as the monstrosity that was Auchinleck House on Five Ways has been beautified in to the new Park Regis hotel and Rofuto Japanese restaurant and Kurabu bar. It is now open, and I’m fairly confident its gorgeous bar and restaurant on the top floor will soon be heaving with those in the foodie know in Birmingham. The triple height glazed bar is a perfect place to watch day turn to night after work and look upon the city as it lights up. The décor is refined and brings to mind bars we’ve visited in cool cities globally, and the drinks offering is certainly up there with them too.

Out In Brum - Rofuto - Cocktail 2The Japanese flavours are obvious in the drinks menu. You can get a good selection of wines, and Champagne, but you can also get Japanese lagers including Kirin Ichiban, Asahi, Sapporo, as well as Hitachino Nest White Ale and Red Rice Ale (all about a fiver a pint). The cocktail list is also themed with tasty Eastern ingredients. The Oriental Fizzu was cool and refreshing and packed a yuzu and kumquat hit. We also enjoyed the sharp Sakerinha, sake with wonderful passion fruit and grapefruit, and a perfectly perfumed slightly sweeter Lychee Martini. Cocktails are around £9.  We also tried some really plummy sake.

Attention to detail is obvious here, with concrete ceilings and pillars imprinted with a natural watery detail, subdued lighting, low music, perfectly aligned high design furniture, and immaculately dressed staff.

Out In Brum - Rofuto - SushiI’m not hugely knowledgeable about Japanese food despite eating fairly regularly at Yakinori, one of our everyday favourites that provides us with filling sushi, noodles, and our favourite katsu curry. Rofuto is a different type of offering. It’s not somewhere to pop in for a bite to eat while you’re rushing home, it’s a grown-up type of place, where you’d take your time over a romantic dinner, and then while away a couple of hours with cocktails.

Out In Brum - Rofuto - RestaurantThe menu is split between sushi and sashimi, starters, and mains. There’s nothing prettier than well presented sushi, and nothing tastier either, and Rofuto’s did not disappoint. To start we tried some crab sushi rolls and shared “Japanese Fish and Chips” (£12). Firm fleshy bright white scabbardfish was covered in a crispy herby batter and served with a tartare sauce with a mild passion fruit flavour, cassava crisps, and buttery mushy peas. Not sure how Japanese it was, but it was certainly tasty. There was plenty there to share for two and I’d recommend it.

For my main I had sesame tuna Tataki with soft shell crab and black garlic (£20). Out In Brum - Rofuto - Japanese Fish and ChipsDecorated with lotus root crisps and dots of black garlic, it was a very attractive dish. Chunks of seared tuna were set off with black sesame seed. The soft shell crab was served in a casing of light tempura and had a strong crab flavour. A pretty and tasty dish. I also had a side of broccoli (£4.50). Our other main was Black Angus beef fillet, garlic ponzu, and truffle (£22). The beef had great flavour and was very tender.

The quality of the food and service is very good, and the setting is excellent. The design aesthetic is effortlessly carried from the furniture and building, to the drinks and food, it really is a lovely place to dine.  One to watch over the coming months…

Birmingham Pride 2016 Preview

Out In Brum - Birmingham Pride 2016 LogoIn a little over a month Birmingham will once again play host to the UK’s largest two day LGBT Pride festival which is sure to be the city’s biggest, loudest, most outrageous party of the year. With the US passing laws restricting the rights of LGBT people, Russia allowing vigilante action violent against gay teenagers, and over seventy countries still criminalizing homosexuality it’s humbling to remember that we in the UK enjoy brilliant human rights, allowing us to be who we are, love whom we want to love, and celebrate that freedom and diversity publicly.

This year’s Birmingham Pride Festival is to be held over the Spring Bank Holiday Weekend Selfridges Birmingham Pride 2013on Saturday 28 May and Sunday 29 May. The festival takes ‘Generation of Pride’ as its theme to coincide with the events 20th year. It features a dance arena, cabaret marquee, funfair and women’s arena, in addition to a host of community stalls and refreshments.

Although it’s an LGBT festival, I’ve yet to meet a non-LGBT attendee who hasn’t enjoyed the spectacle, the wonderful music, cabaret, and general party atmosphere. Birmingham tweeter-about-town Simon Steggles said:

“Pride is such a fun festival! Friends suggested I would enjoy it, so my wife and I watched the spectacle of the parade from Victoria Square and spent the full day on Saturday in the gay village. Brilliant music, a great atmosphere, and very rude hilarious cabaret – we’ll be there again this year!”

Every year the line up seems to get better and better. The acts are still being announced, but here’s some edited highlights.

  • Topping & Butch will be bringing topical comedy lyrics while dressed in skin tight leather, as always

We’ve had such fun at Birmingham Pride over the last few years, with a marked improvement on atmosphere since it became a ticketed event. Opus Takes The Kitchen Into The Classroom

Opus takes the kitchen into the classroom as it’s revealed 60% of pupils can’t make a salad

Opus at Cornwall Street took the kitchen into the classroom last month (MARCH) after it was revealed 60% of pupils don’t know how to make a salad.

Research carried out last year by Future Foundation, a global consumer trends and insight firm, found  60% of children aged between 7 and 14-years-old didn’t know how to prepare a salad, with over a third admitting they had never chopped a vegetable.

In a bid to tackle this issue, award-winning restaurant Opus at Cornwall Street is leading the way, and has ‘adopted’ St Clare’s Primary School in Handsworth – the only restaurant to do so in Birmingham – as part of the Royal Academy of Culinary Arts ‘Adopt a School’ charity programme.

OPUS at St Clare's Primary School with Executive Chef Ben Ternent and Sustainability Champion Sarah Hepburn (1)The initiative aims to tackle health issues and educate youngsters on food preparation, by sending hospitality professionals into schools to teach pupils about nutrition, hygiene, and healthy eating, as well as teaching them basic kitchen skills.

Opus visited the school for the second time on Wednesday 23rd March with its executive chef, Ben Ternent, and sustainability champion, Sarah Hepburn. The duo delighted 60 Year 5 students with a lesson on how to chop, cut and slice different fruits and vegetables to make healthy, nutritious and tasty salads.

Sarah said: “We wanted to adopt a local primary school because we think it’s crucial for children to develop an early relationship with food, understanding where it comes from, what fresh food tastes like and how to prepare meals for themselves. Cooking involves a lot of science, maths and creativity, so we think it’s important to get cooking back onto the primary school curriculum. We know that these lessons will increase the chances of pupils growing up healthily, caring about the source of their food, practicing food hygiene and table etiquette as well as being able to cook delicious meals for their family and themselves.

“When Ben and I visited St Clare’s Primary School, we were so impressed with the excitement and enthusiasm the pupils had. Although 60 children in one morning may seem daunting, seeing them so eager in their chef hats was incredibly fulfilling, as well as teaching them basic kitchen skills which a lot of them admitted they had never done before.”

Sophie Killian, Year 5 class teacher at St Clare’s Primary School, said: “It’s been fantastic to have Opus in our classroom teaching these skills – the pupils have really enjoyed having them here and it’s great for them to try new things. They’ve learnt some vital chopping techniques and actually allowing the kids to wear the chef hats and aprons and act like proper chefs has been a lot of fun.”

Pupil Simran Sheemar, aged 9, said: “Although I sometimes cook at home, I don’t do it a lot. Chef Ben has taught me how to cut and chop and I can’t wait to go home and make this for my parents.”

Opus Restaurant will teach a total of three lessons to St Clare’s Primary School throughout 2016, and pupils will also be  visiting Opus’ kitchen.

Peel & Stone Harborne – Preview Sessions in the Jewellery Quarter

Buns_LOGO_BLUEAs I am sure most of you are aware, the guys at Peel & Stone are due to open their next bakery in Harborne very soon.

Located on the roundabout where the High Street meets War Lane and Lordswood Road, they have been busy building a new premises in what has looked like a derelict shop for the past few years. It has taken a while, with the unit split over multiple levels including a basement, but they are almost ready and getting close to throwing open the doors.

The team have been assembled for the opening and as a trial for them, and a preview for the rest of us, the new team are running the existing venue in the Jewellery Quarter for a couple of Saturdays for the public to purchase and sample the food offering that we can expect once they open in Harborne.

Simpsons Charity Pop-Up at The Butlers Arms

simpsons-logo1As you all probably know, we are big fans of chef Nathan Eades and have followed his local career from pop-ups in Brum, through his residency at Kitchen Garden Cafe in Kings Heath, onto his own venue for Epi in Bromsgrove, and for the past year or so his current position as head chef at Simpsons – well-known for its food and its 16 years of holding a Michelin star.

butlers-armsTherefore, you can imagine our excitement when we learnt that not only was he teaming up with one of our favourite go to local eateries, The Butlers Arms in Sutton Coldfield, but that the special one night only event was being organised to support a number of local charities.

The evening is being organised by the Rotary Club of Erdington (part of the Heart of England district) on the evening of Sunday 1st May (Bank Holiday so no getting up for work – Yippee).

The six course signature menu for the night is as follows (but from our past experiences of Nathan’s cooking, we suspect there will be some twists along the way):

This will be enhanced by a welcome drink on arrival and coffee with petit fours to conclude.

The evening will also offer both a charity auction and raffle along with a chance to try your luck and skill to attempt to crack the safe. If you do manage it there are the keys to a brand new car waiting for you inside.

“BURNAID operates by providing:

  • Grants to fund a wide range of projects which include subsistence, accommodation and travelling expenses for patients and families.
  • Special equipment for patients to make their lives more comfortable.

  • Specialist equipment for the two Burn Centres to improve patient care.
  • Equipment to improve the environment for patients, families and siblings at the Burn Centres.
  • Home safety equipment for example stair gates and fire guards.

  • Funds to enable a Support Group to run on a monthly basis at the Adult Burn Centre.
  • Funds to enable a Support Group called ‘Enzo’s Friends for children and their families to continue to offer fun family days out and special events, attendance at national burn camps and social activities.
  • Funds to support the school reintegration programme ‘Back to School’ which helps children and young people with the transition back to school life after a burn injury.

Enzo’s Friends

“Enzo’s Friends is a support group for children, young people and their families who have sustained a burn injury. You can become a member of Enzo’s Friends if you are aged 16 and under and are currently or have been a patient at the Burn Centre in Birmingham Children’s Hospital, regardless of when the injury happened or how close you live to the hospital.

“Enzo is the mascot of Birmingham Children’s Hospital Burn Centre. He is a friendly red dragon, who was chosen by patients to represent the Centre.

“We are committed to providing support during treatment, rehabilitation and beyond to a patient and their family, and help them to cope with the changes that may occur following a burn. We do this in several ways;

  • Providing practical support whilst you are in hospital
  • Newsletters which contain useful information and share what Enzo’s Friends is all about
  • Competitions either through the newsletter or in out-patients
  • Information, advice and signposting for patients and families, to help them find the right support for their needs
  • “Have Your Say” which gives all members a chance to share their experiences with others, and also have a say in the development of Enzo’s Friends
  • Events and Activities throughout the year for patients receiving active treatment, which enables patients and families to meet others with similar experiences, and to encourage social skills, confidence and self esteem. And of course, to have fun!

CAU Restaurant

Out In Brum - CAU - Sunday Roast BeefWe eat at many restaurants that have recently opened and invariably there’s something amiss – service can be slow, food cold, bills wrong – they usually get better as the weeks roll by (not always, and safe to say those places like Isaacs don’t last long). The 130ish seater CAU restaurant which opened a fortnight ago in Brindley Place initially seemed to us not to even have had those small hitches, perhaps thanks to having Zeev Godik, the creator of successful 18 restaurant global chain Gauchos as one of the directors. CAU Birmingham also has another 17 sister restaurants throughout the UK, so we’ve obviously got a serious taste for Argentinian beef at the moment.

Out In Brum - CAU - InteriorThe office building that the restaurant now occupies has been smartly converted. A portico offers outdoor heated seating – perfect for eating a summer lunch, or supper in the evening with a beer or a wine. Inside quirky lighting and wallpaper designs provide a stylish background to a meaty dinner in comfy booth seating, though the overall effect may be too playful for some diners.

On its opening Friday we took 26 (twenty-six!) of us for breakfast ahead of our Good Friday pub crawl. The waiting team were somewhat nervous at dealing with us but we Out In Brum - CAU - Latin Eggswere dealt with brilliantly including being given some jugs of perfect Bloody Mary while we waited for food (really, we are very picky with them but they were very good). For breakfast I had the Latino eggs (£7), which consisted of sliced cool avocado, runny poached eggs, and chimichurri sauce (garlic, parsley, oil, oregano) on toast, a very tasty morning dish to wake up the taste buds. Several people had the scrambled egg (£5) – all good though all a slightly different colour and done-ness. Alas, we had one minor disaster – a small foreign object, no doubt a leftover from the recent fit-out, in a scrambled egg! The staff were very apologetic and remade the dish very quickly. The sweet potato Out In Brum - CAU - Pork Bellyand chorizo hash looked really hearty and I shall try that next time. We also tried the Pink Lady apple juice which was sweet and refreshing.

Needing somewhere to dine for Easter Sunday lunch we thought we’d go back and try the mains, though we only inflicted four of us on them this time. We didn’t opt for starters as we were in a hurry to catch the boat race at the pub (Cambridge won, boo!). We enjoyed their BBQ Burger (£11.95), complete with stacked crispy onion rings. I loved the twice cooked pork belly (£14.50) with juicy rendered fat, soft meat, and crispy crispy crackling sticks served on a bed of sweet and earthy puréed sweetcorn. A side of cheesy polenta mash (£2.95) was an excellent accompaniment. We also tried the Sunday Roast Out In Brum - CAU - BurgerBeef (£15) – a massive portion of tender pink sliced rump with Yorkshire pudding, josper roast carrotts, crispy beef fat roast potatoes, red wine gravy and onion rings. It was all brilliantly executed, and I’d be happy to eat it every week!

Unfortunately, we went back again on a Thursday evening.  We were seated on a tiny round table in a corner where one of us looked over a table a foot away with a couple having a romantic dinner, and the other of us had a view of a table of four having a chat.  We moved tables.  I had a competent if somewhat bland sausage cassoulet, and we ordered the 400g £28.50 Lomito steak.  Firstly, grams mean nothing to me, having done the conversion now it’s just over 14oz, and that’s a ridiculous amount of steak.  Secondly, we ordered it medium, and it came very rare and I suspect not rested.  After cut one, as the waitress saw it bleeding on the plate, she asked if it was OK – we said we’d give it a go but by the middle of the steak there was a red pool of blood to deal with and that was that.  Steaks are such aOut In Brum - CAU - Bleeding Steak matter of opinion aren’t they.  The waitress asked if we wanted it done more but I don’t eat food that’s had to go back to the kitchen.  They took everything off the bill which was kinda nice of them but felt like an overreaction and made us feel like it was our problem somehow.  It wasn’t.  If you’re going to sell me £28 of steak, cook it correctly the first time around.  Should you be interested in the science of steak resting here’s a good article on it.

Will we go back?  Yes, the Sunday lunch and the breakfast were excellent.  Would we have steak again?  Maybe after we’ve had our foodie friends revisit and had some more Out In Brum - CAU - Exteriorreviews.  For now at least, Anderson’s Bar & Grill and Fiesta Del Asado are Birmingham’s go-to steak houses, but for dinner with friends CAU will mostly fit the bill.

Chef Ben Tesh Returns to Birmingham With A 10 Course Taster

Ben has trained at some of the UK’s best Michelin starred restaurants.

Ben began his career at Winteringham Fields with Colin McGurran, before his move to famed Anthony’s Restaurant in Leeds, where he worked his way to the position of Head Chef.

He followed his time in Leeds with stints in some of London’s finest kitchens and spent a short time working in Denmark under Rene Redzepi at former best restaurant in the world, Noma. Upon his return to the UK he worked with Alex Bond at Michelin stared Turner’s restaurant.

Ben has also spent time furthering his culinary knowledge, working for free in renowned restaurants such as 1* Hedone, London, 2* L’enclume, Cartmel and 1* Pollen Street Social, London.

We’re expecting great things from what should be an unforgettable evening.

Fishy Fridays at Ju Ju’s Cafe

To quote the line from cheers, “Sometimes you wanna go where everybody knows your Out In Brum - Ju Ju's - Fish and Chipsname”. When I feel like that, it’s often Ju Ju’s Cafe I choose to dine in. The wonderfully warm Julia, her affable daughter Bea, and long time waiter Richard make everyone feel right at home. I’d equate the experience as dining at your favourite aunt’s house, with stories of foreign travel and tipsy antics to boot. Some friends and family have dietary issues which mean they can be difficult to take anywhere, nothing is too much trouble for Julia and the team and they’ve been happy for people to share mains and swap out sides.

In winter the snug canal side eatery in the Watermarque development, just 5 minutes on foot from Brindley Place and accessed either from Browning Street or Sheepcote Street (walk over the footbridge by the side of Liberty Place), offers cheery respite from the cold, and in summer a waterside terrace for brunch with a Bloody Mary or two, or perhaps supper with a chilled bottle of prosecco.

The food is hearty. When occasionally we go for Friday night fish and chips we must ensure we do not eat for at least 12 hours before. Firm white fleshy hake in golden crisp batter Out In Brum - Ju Ju's - Nachoswith perfect chips, pea purée, tartare sauce, and bread and butter – for that essential chip butty – is sure to fill you to the gunnels. Other dishes are equally as generous. A dish of haggis and oxtail provides a mound of creamy mashed potato with rich gravy and tasty seasoned meat. For starters we often share the sunburst of crisp nachos with beef chilli which are the best nachos in Brum in my opinion.

If comfort food isn’t your thing, you can have a lighter all day breakfast, a burger, and the usual restaurant fair, or at the end of the week you can indulge in JuJu’s Fishy Fridays. Let Julia know in advance what fish you’d like and she’ll source it for you and cook it as the special.

Out In Brum - Ju Ju's - Mahi MahiWe challenged her to find us some Mahi Mahi, sometimes known as Dolphin fish with a texture similar to shark, which we had a couple of times on honeymoon in the Florida keys. Chef did a great job. Our Mahi Mahi was served perfectly cooked with an Asian style dressing and slightly spicy mango salsa, spinach and a lemon wedge. It can be tricky to get decent fish in Birmingham restaurants but this place is a real contender of the few places that offer fish dishes not just as an afterthought. On Mother’s Day we ate at JuJu’s and I had the Hake which was sautéed and served under a spicy chilli ratatouille with crispy roast potatoes – a really successful dish.  There are often fish specials on the menu plus dishes like creamy cullen skink.

For dinner, two courses with wine here is likely to set you back around £30 a head, and Out In Brum View from Ju Ju's Cafeyou’ll get a plentiful brunch for around £20 with (non-alcoholic) drinks.

More than that though you’ll be treated to sincere hospitality, something that’s so often lacking in many venues. So next time you’re thinking of nipping out for a bite in a Brindley Place generic restaurant, go be looked after at JuJu’s instead.

Rofuto is a direct translation of the word ‘loft’ in Japanese and the interiors reflect this inspiration. The vision for the restaurant and cocktail lounge has been created by one of the UK’s most respected restaurateurs, Des McDonald. With over 20 years’ experience running some of the world’s most high profile establishments including Le Caprice, Scott’s, Soho House and Annabel’s. Early in his career, Des was Head Chef at the world famous Ivy restaurant, before moving from the kitchen into the boardroom to become CEO of Caprice Holdings.Rofuto   Des was inspired to open Rofuto following visits to Tokyo and Singapore; he has developed every aspect of the concept, design and menu to bring a new izakaya-style restaurant to Birmingham’s thriving dining scene.

I love rooftop spaces, having opened four successful restaurants on the roof of Selfridges in London. Rofuto will be open for lunch and dinner on Tuesday to Saturday and Sunday for lunch. The restaurant will serve modern Japanese cuisine, made using world-class fresh ingredients, from traditional sushi to yakitori from the grill. The menu is divided into six sections: Sushi and Sashimi, Tempura, Robata Grill, Mains, Sides and Desserts.
Signature dishes include Foie gras nashi pear gunkan Chinese truffle; Confit duck andraspberry sunomono; Saffron gindara with razor clams, Chinese sausage, kohlrabi puree and sea herbs; Sesame tuna tataki and soft shell crab with wasabi puree and black garlic crumble and Miyazaki Wagyu beef served with gobo crisps, avocado puree, garlic ponzu and truffle salt. Desserts feature twists on European classics such as Matcha tiramisu and wasabi macaroon and Cardamom and coconut panna cotta with passion fruit.
Kurabu Cocktail Lounge will offer an array of wines, beers and soft drinks, along with aBar Visual new bespoke cocktail list and unique sake offering to perfectly compliment the Japanese cuisine. Fresh Sake from Takashimizu Brewery in Northern Japan will be on offer, alongside Koshua aged Sake from Shiraki Brewery in central Japan. The cocktail list includes highlights such as the Red Lotus which combines Shochu, Tequila, Cranberry and Lychee Sorbet and Kietsu which is an exotic combination of infused Raspberry Sake, Passionfruit liqueur, Apple and Pineapple. Rofuto’s wine showcases some more unusual varieties such as Pecorino, Gewurtztraminer and Pinot Blanc in the whites and a particular focus on low alcohol, low tannin reds.

The restaurant’s interior, designed by Tibbatts Abel (Interior Designer for Jinjuu Soho and Buddah Bar) is a fusion of urban, industrial and warehouse design inspiration alongside a fun and vibrant cocktail lounge style. Warm rustic timber is used throughout, with industrial tones and a palette of neutrals, warm taupe’s, greys and blacks.

Des McDonaldDes McDonald honed his culinary skills and built up his knowledge cooking in 5-star hotels including The Ritz in London. In 1992 he got his big break with Caprice Holdings working as head chef at the legendary Ivy Restaurant. After a very successful 20 years with the Caprice Group – which saw Des move from the kitchen to the boardroom working for the last 12 years as Managing Director and Group CEO – also running the Soho House Group and the Birley Group, he decided to set up his own restaurant business. In May 2013 Des opened his first solo venture, the critically acclaimed Fish & Chip Shop on Upper Street, N1. Following its success, in February 2014 he launched Holborn Dining Room, a classic British brasserie at London’s five star hotel, Rosewood London. A new barbeque restaurant concept: Q Grill Chalk Farm followed and Des also had the opportunity to launch On the Roof with Q, a pop-up roof top restaurant at Selfridges that summer. In 2015 Des rebranded his restaurants on Upper Street & Liverpool Street to Vintage Salt, following the success of his third Selfridges rooftop pop-up of the same name. Park Regis Birmingham opens on Tuesday 29th March 2016 and boasts 253 deluxe ParkRegis_Level_16 bedrooms, two junior suites, the largest presidential suite in the city, an executive level complete with conference and meeting space, and a business lounge with executive check-in facilities. The £50 million hotel is the brand’s first Park Regis in Europe and has created over 200 jobs for the region.

Opus Brings Sustainability to the Table with Special Dinner Series

OPUS ExteriorOne of the Midland’s most sustainable independent restaurants will be taking the topic of seasonal and ethical farming from the field to the table in its unique series of ‘Source Dinners’.

Opus at Cornwall Street will be hosting five Source Dinner events in which Birmingham food enthusiasts can taste the produce, meet the suppliers and hear their compelling stories and history, as well as learn why sustainability is at the heart of everything they and Opus do.

We’re too late to tell you about the first in the Source Dinner series – the Heritage Potato Dinner Hosted by Lucy and Anthony Carroll of Tiptoe Farm in Northumberland last night (Friday 11th March).  However there’s still three more to come.
